The plant, wheat, from which wheatgrass is harvested, is actually gluten-free in its pure form. It is because it is harvested before it produces the seeds where the gluten is found. Sometimes only some plants ripen faster before being harvested, so the seeds form along with gluten at a minuscule level, but the result is no longer gluten-free.
